From Moosewood Restaurant Low-Fat Favorites. It is delicious with broccoli instead of asparagus, or with a variety of vegetables, such as onions, peppers, and mushrooms. Adjust the marinade as needed for extra quantity.

Recipe Ingredients for Roasted Asparagus

1 pound asparagus, cleaned, tough stem ends removed
2 teaspoons olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon salt
1 garlic clove, minced
1/2 teaspoons tarragon

Recipe Directions for Roasted Asparagus

  1. Preheat oven to 400 degrees

  2. Toss together the asparagus and marinade in a bowl until the asparagus are well coated. Arrange in a single layer on an unoiled jelly roll baking tray.

  3. Bake for 20-25 minutes, stirring occasionally, until the asparagus spears are to desired degree of tenderness.
