Recipe Ingredients for Roasted Asparagus with Gruyere

32 oz Asparagus
1 small Onions
1 small Peppers, Sweet, Red
0.5 oz Extra Virgin Olive Oil
0.25 cup, shredded Gruyere Cheese
0.25 tsp Salt, Table
0.25 tsp Pepper, Black

Recipe Directions for Roasted Asparagus with Gruyere

  1. Chop the onion into thin wedges and cut the pepper into thin strips. Discard the woody bases from the asparagus spears. If desired, scrape off scales. Place asparagus, onion, and sweet pepper in a 15x10x1-inch baking pan. Drizzle with olive oil; toss gently to coat. Spread in a single layer and sprinkle with salt and pepper.

  2. Roast, uncovered, at 400 degrees F oven about 20 minutes or until asparagus is crisp-tender. Transfer to a serving platter and sprinkle with cheese. Let stand 2 minutes until cheese is melted.
