Delicious roasted veggies and tofu. Makes a great vegetarian dinner!

Recipe Ingredients for Roasted Asian Veggies with Tofu

14 oz. extra firm tofu
1 cup sliced mushrooms
2 cups diced red pepper
1 cup sliced asparagus
1 cup diced onion
2 tsp minced garlic
1 tsp minced ginger
2 tsp olive oil
1 tsp sesame oil
2 tbs vinegar
2 tbs soy sauce

Recipe Directions for Roasted Asian Veggies with Tofu

Drain and dice tofu. Mix veggies and place in gallon ziploc bag. Mix garlic, ginger, olive oil, sesame oil, vinegar (I use rice vinegar) and soy sauce and pour over veggies. Let maranade for a few hours. Roast at 450 degrees for 15-20 minutes, stirring every 5 minutes. Serve with rice.
