Recipe Ingredients for Roasted Apple & Acorn Squash Soup

2 medium (3") Apples
2 small (5-1/2" long) Carrots
1 cup, cubes Squash, Winter, Acorn
2 1tsp Olive Oil
1 cup, chopped Onions
2 clove Garlic
1 serving Swanson unsalted cooking stock, chicken
3 tsp Classic Dijon Mustard
3 tsp Ginger Root

Recipe Directions for Roasted Apple & Acorn Squash Soup

oven 400 degrees, place cored apples, carrot and squash upside down in a shallow pan with 1/4 inch of water, Bake for 35 minutes, reove apples and carrots and flip squash over, drizzle with 1 T olive oil and sprinkle of salt. Broil for 10 minutes, . In saucepan, heat 1 T oil, add oinions and saute for 5 minutes, add garlic and saute 1 mor minute. Peel and cube squash. Bring to a boil, Add pepper, ginger and mustard, simmer 5 minutes. Puree in blender. Season to taste with salt and pepper.
