Recipe Ingredients for Roasted Acorn Squash w/Cumin and Seeds

2 acorn squash, medium, halved cross wise and seeded
1 pinch salt
1 pinch pepper
1 tsp cumin, ground
1/4 c. pumpkin seeds, toasted

Recipe Directions for Roasted Acorn Squash w/Cumin and Seeds

  1. Preheat oven to 400F

  2. Place the acorn squash halves, cut-side up, on a baking dish or baking sheet; coat with a spray of cooking oil, season with salt, pepper, and cumin.

  3. Roast until tender (about 30 minutes). Transfer squash to serving plates and sprinkle each half with about 2 tsp. of seeds.
