Roast Winter Vegetables Recipe

Recipe Ingredients for Roast winter vegetables

1 sweet potato
2 beets
3 carrots
2 tbsp olive oil
1/4 cup fresh thyme
1/4 tsp salt
1/2 tsp black pepper

Recipe Directions for Roast winter vegetables

  1. Cut up the vegetables into wedges or 2 inch by 1 inch pieces.

  2. Put to soak in a bowl - add the salt and enough water to just cover.

  3. Leave to soak for at least 2 hours. If you are prepping for a party, you can do this much the day before if you put the bowl in the fridge.

  4. Preheat oven to 375 degrees F.

  5. Drain and pat dry the vegetables

  6. Chop up the thyme

  7. Toss the vegetable and thyme in the olive oil

  8. Add the pepper

  9. Place in a roasting pan in a single layer,

  10. Roast until the veggies are tender - about one hour

  11. Stir at least once or twice during the cooking time to make sure the veggies don't burn or stick.

  12. Serve immediately
