Recipe Ingredients for How to Roast a Whole Chicken

1 unit Chicken, roasting, meat and skin, raw
1 tsp olive oil
15 cloves of garlic

Recipe Directions for How to Roast a Whole Chicken

  1. Roast the garlic 400F for 30-35 minutes, or until the cloves feel soft when pressed.

  2. Coat chicken with roasted garlic, on top and under the skin.

  3. Apply other seasonings and herbs. Be mindful, other seasonings may add sodium.

  4. Regular method

  5. Preheat oven to 350 degrees F (175 degrees C).

  6. Roast whole (thawed) chickens for 20 minutes per pound, plus an additional 15 minutes.

  7. High heat method - this results in a crispy, darker skin

  8. Preheat oven to 450 degrees F (230 degrees C) and cook whole (thawed) chicken for 10-15 minutes.

  9. Then, reduce the temperature to 350 degrees F (175 degrees C) and roast for 20 minutes per pound. (Do not add the extra 15 minutes to the cooking time as with the regular method.)

  10. Regardless of the method used, a whole chicken is ready when a meat thermometer inserted into the inner thigh (close to, but not touching the thigh bone) reads at least 165 degrees F (74 degrees C).

  11. The temperature of the meat will continue to rise slightly when you pull it out of the oven (this is called "carryover cooking"), so if the thermometer shows a few degrees below the target, you can still pull the chicken out of the oven--just check and make sure that the internal temperature has risen to at least 165 degrees F (74 degrees C) within five minutes.

  12. When you remove the chicken from the oven, cover it loosely with a doubled sheet of aluminum foil, and let it rest for 10 minutes before slicing. This redistributes the juices and results in moister chicken.
