Recipe Ingredients for Roast Vegetables w/ tahini dressing

1/4 cup chopped basil
1 garlic clove
1/2 cup leek, chopped
50 g eggplant
200 g spinach
50 g zucchini
50 g yellow squash
25 g red pepper
2 small mushrooms
1 small carrot
1/2 tbsp tahini
1/2 tbsp tamari
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp turmeric
1/2 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Roast Vegetables w/ tahini dressing

  1. Roughly chop up vegetables into bite size pieces and place in a large bowl.

  2. In a small bowl, whisk tahini, tamari + spices. Pour over vegetables and mix well.

  3. Pour vegetables onto a baking tray and sprinkle with salt + pepper.

  4. Roast/bake for 30 mins, longer if softer vegetables are desired.
