Recipe Ingredients for Roast vegetables

1 sweet potato, cubed
1 medium onion, cubed
2 1/2 cups broccoli, cubed
1 tablespoon olive oil
1 salt
1 pepper
1 herbs to taste

Recipe Directions for Roast vegetables

  1. Cube all vegetables to three different sizes - sweet potatoes should be smallest at about 1 inch, then the onions, and finally the broccoli.

  2. Pour the olive oil in a baking sheet and add the vegetables, turning them until they are coated, the broccoli especially.

  3. Sprinkle with seasonings and put in a very hot oven for 30-40 minutes, shaking the pan occasionally. Cook until the potatoes are soft and the broccoli just beginning to blacken.
