This is the recipe that made me stop hating Brussels sprouts

Recipe Ingredients for Roast Vegetables

10 oz crimini mushrooms
1 medium eggplant
1 medium yellow onion
1 medium zucchini
1 medium sweet potato
8 Brussels sprouts
10 cloves garlic
4 tablespoons extra virgin olive oil
1 tbsp fresh rosemary

Recipe Directions for Roast Vegetables

  1. Preheat oven to 400.

  2. Peel sweet potato and garlic.

  3. Cut all vegetables except garlic, zucchini and Brussels sprouts into 3/4" chunks. Keep mushrooms separate.

  4. Cut zucchini into 1/4" semicircles; quarter Brussels sprouts lengthwise; keep garlic whole.

  5. Mix rosemary with mushrooms.

  6. Toss mushrooms and rosemary with 1 tbsp olive oil.

  7. Toss other veggies with 3 tbsp olive oil.

  8. Spread non-mushrooms veggies in one layer at bottom of roasting pan.

  9. Cook for 30 minutes in middle of oven, tossing vegetables every 15 minutes.

  10. Add mushrooms and rosemary during last 15 minutes.
