Recipe Ingredients for Roast vegetables and hummus

1 tortilla
4 tablespoons hummus
1 teaspoon olive oil
1 yellow pepper
1 onion
1/2 eggplant

Recipe Directions for Roast vegetables and hummus

  1. Grease roasting pan with olive oil

  2. Chop vegetables

  3. Roast them until fragrant and browned

  4. Spread hummus over tortilla

  5. Wrap roasted vegetables in tortilla, hummus inside.

  6. Cut in half.

  7. Enjoy!
