Recipe Ingredients for Roast Veg Couscous

0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.5 large Onions
1 stalk, medium (7-1/2" - 8" long) Celery
300 grams Co Us Cous
6 clove Garlic

Recipe Directions for Roast Veg Couscous

  1. Chop all veg (except garlic) equal size

  2. Stir in olive oil so all veg is coated evenly. Put on tray and spread out, add unopened garlic cloves. Roast on med oven for 20-30 mins. Cook couscous according to pack. When all is ready mix together, cut off eneds of garlic cloves and squeeze raosted garlic to mixture. Season to taste
