An autumn soup to use up excess pumpkin

Recipe Ingredients for Roast Pumpkin and Garlic Soup

500 g pumpkin
4 cloves garlic
2 1/2 ml olive oil
300 ml stock
1 salt
1 pepper

Recipe Directions for Roast Pumpkin and Garlic Soup

  1. Cut the pumpkin into inch sized chunks.

  2. Spray an oven tray with a little fry light olive oil and spread the pumpkin over the tray.

  3. Peel the garlic and scatter them whole among the pumpkin.

  4. Spray the pumpkin lightly with some more olive oil.

  5. Roast in a hot oven (200C) for about 30 minutes or until soft and tender and then tip them into a deep saucepan.

  6. Warm the stock and add some to the pumpkin.

  7. Using a hand blender, blend the the mixture until smooth, adding more stock if required.

  8. Season the soup to taste.
