1 1/2 pound pork loin roast, cooked (3 cups cubed)
2 medium potatoes, peeled and chopped
1 large onion, chopped
15 ounces navy beans, canned, rinsed and drained
14 1/2 ounces Italian tomatoes, diced, undrained
4 cups water
1/2 cup unsweetened apple juice
1/2 tsp salt
1/2 tsp pepper

In dutch oven, combine first 9 ingredients. Bring to boil. Reduce heat, cover and simmer for 45 minutes or until vegetables are crisp tender. Sprinkle with fresh basil.
