Roast with parsnips, carrots and sweet potatoes

Recipe Ingredients for Roast with parsnips, carrots, sweet potatoes

2 1/2 pound chuck roast
3 medium carrots
1 1/2 c parsnips, diced
1 1/2 c sweetpotatoes, diced
3/4 c white wine
2 tbs butter
1 tsp basil
1 tbs worchestershire sauce
3/4 c sweet onion, sliced
2 cloves garlic, sliced

Recipe Directions for Roast with parsnips, carrots, sweet potatoes

  1. brown roast in butter, remove from pot and cook onions and garlic. Add carrots, sweet potatoes, parsnips to cooking onion mixture. Return meat to pot.

  2. Bake at 325 for 2 hours.
