Oven-roasted eggplant with Italian seasoning.

Recipe Ingredients for Roast Eggplant (low-carb)

1 eggplant
1/2 c tomato sauce
1 onion
4 slices provolone cheese
1/2 tsp salt
1/2 tsp pepper
1 tsp basil
1 tsp oregano
1/4 c olive oil

Recipe Directions for Roast Eggplant (low-carb)

  1. Cut eggplant and dice onion.

  2. Cover with olive oil on a glass baking pan.

  3. Add salt and pepper.

  4. Add tomato sauce and herbs.

  5. Mix.

  6. Roast at 350F for 1 hour or until eggplant is soft.

  7. Add cheese, and allow to melt for 5 minutes.
