Recipe Ingredients for Roast Duck with Fruit and Cheese Stuffing

1 duck, whole
2 tsp. salt
2 tsp. fresh ground black pepper
1/2 cup cream cheese
1 slice whole wheat bread
1/4 cup dried cherry
1/4 cup dried blueberries
1/2 cup chopped walnuts
1 pear, sliced
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 Golden Delicious apple, cored

Recipe Directions for Roast Duck with Fruit and Cheese Stuffing

  1. Salt the duck and allow to dry out in the fridge for 48 hours before roasting.

  2. Preheat oven to 375 degrees.

  3. Rinse the salt from the duck and thoroughly pat dry.

  4. Coat the duck skin with the black pepper.

  5. Remove excess skin at neck and reserve for other uses.

  6. Microwave the cream cheese for about 1 minute on low heat to slightly soften.

  7. Use a kitchen scissors to cut the bread into 3/4 inch cubes, and mix with the cheese.

  8. Add the cherries, blueberries, walnuts, and pear to the cheese mixture, and stir.

  9. Add the cinnamon and nutmeg, and stir.

  10. Stuff the duck cavity with the stuffing mixture.

  11. Place the apple at the opening of the duck cavity.

  12. Roast the duck for 10 minutes for every pound of duck, plus 10 minutes.

  13. Serve immediately.
