Handy soup made from Sunday lunch left overs

Recipe Ingredients for Roast Chicken Soup

1 tbsp Olive Oil
2 medium (2-1/2" dia) Onions
3 carrot (7-1/2") Carrots
1 tsp Thyme, Fresh
1 Cube Chicken Stock Cubes
300 grams Chicken, Meat Only, Roasted
300 grams Peas, Green
1 clove Garlic

Recipe Directions for Roast Chicken Soup

  1. Heat oil in a large heavy-based pan. Add onions, garlic, carrots and thyme, then gently fry for 15 mins. Stir in stock, bring to a boil, cover, then simmer for 10 mins.

  2. Add the chicken, remove half the mixture, then purée with a stick blender. Tip back into the pan with the rest of the soup, peas and seasoning, then simmer for 5 mins until hot through.
