Yummy roasted chicken, leftovers great for chicken pot pie.

Recipe Ingredients for Roast Chicken

2 pounds boneless skinless chicken breasts (4 large breasts)
1 med onion
2 cups carrots
6 small potatoes
2 tbsp poultry seasoning

Recipe Directions for Roast Chicken

place chicken in 9 x 13 pan. quarter potatoes and cut carrots to 2 inch lengths, arrange around chicken. sliver onion, scatter across the top. spread poultry seasoning evenly, add water to cover. Cover with foil, bake at 350 for 1 1/2 hours.
