1 tbs olive oil
48 oz. boneless chicken breasts, with skin on
2 lbs shitake mushrooms, sliced
3 cloves garlic, chopped and minced
4 cups heavy cream
1 tbs thyme
1/2 tsp sage

Recipe Directions for Roast Chicken Breasts with Kentucky Shitake cream sauce

  1. Season side of chicken with salt and pepper. Place chicken breasts skin side down in skillet cookuntil skin is crisp and golden brown. Bake chicken in oven for 15 minutes or until internal temperature reaches 165 degrees.

  2. While chicken is baking, add mushrooms and garlic to skillet. cook over medium heat until tender, stirring occasionally. Add heavy cram; cook until thickened. Add chopped herbs and season with salt an dpepper, stirring to combine. Serve hot over chicken breasts.
