Roast carrots, sweet potato and onions

Recipe Ingredients for Roast carrots, sweet potato and onions

200 g onion
300 g sweet potato
250 g carrots
2 t olive oil
1 salt and pepper

Recipe Directions for Roast carrots, sweet potato and onions

  1. Cut the onion (1 med-large) into 1 cm wedges. Microwave on full in a covered bowl with 3 tbsp water for 5 mins. Drain and place in a roasting tin.

  2. Scrub the carrots and sweet potato. Cut into chunks, making the potato about 50 % bigger than the carrot. Add to the roating tin.

  3. Drizzle the oil over the veg and season. Stir well.

  4. Roast at 180 for 30 - 45 mins
