Roast Butternut Squash Salad with soy balsamic dressing

Recipe Ingredients for Roast Butternut Squash Salad

1 1/5 kg butternut squash, peeled and cut into 2cm cubes
1 tbsp olive oil
100 g lentils, puy
150 g rocket
2 tsp sesame seeds, toasted
6 spring onions, sliced
3 tbsp balsamic vinegar
1 tbsp soy sauce
1 pepper, hot chill, red, seeded and chopped
1 garlic clove, finely chopped
1 tsp honey

Recipe Directions for Roast Butternut Squash Salad

  1. Heat over to 200C/fan 180C/gas 6. Put squash on baking tray, drizzle with olive oil and season. Roast for 30 mins or until tendet, shaking the tray a couple of times to keep it from sticking. Simmer lentils for 15 minutes or until al dente, then drain.

  2. Whisk together the dressing ingredients (balsamic, soy, chilli, garlic & honey). Put the rocket in a shallow serving bowl and arrange the lentils & squash on top. Pour the dressing over and top with sesame seeds and spring onions.
