Roast veal with a vegetable puree gravy. Try it with a combination of mashed celery root and mashed potatoes.

Recipe Ingredients for Roast Boneless Veal Breast with Pureed Vegetable Gravy

1800 grams Veal, Breast, Whole, Boneless
1 tbs olive oil
2 medium onions
2 large carrots
100 grams celery root
5 cloves garlic
1 tsp peppercorns
1/2 cup balsamic vinegar
1 tsp bouillon

Recipe Directions for Roast Boneless Veal Breast with Pureed Vegetable Gravy

  1. Preheat oven to 350 or 180 Celsius.

  2. Salt and Pepper Veal then saute in olive oil until browned all over in a large dutch oven or heavy, deep pan with an oven proof cover.

  3. While veal browns, peel carrots and chop into large pieces do the same with the celery root and onions. Peel garlic cloves.

  4. When veal is almost done browning add all the vegetables and let them brown a bit.

  5. Add water until the veal is almost half covered. Add bouillon cube, peppercorns, laurel (bay) leaves, a rosemary branch or two and vinegar. Cover and place in oven for about 2 hours.

  6. When done, place veal on a plate to set and while its doing that use a slotted spoon to remove all the vegetables. Place these in a cuisinart (or something like it) and puree them. Spoon in the juice from the pan until the vegetables are fluid enough to work as gravy. Salt, pepper and a dash of sugar to taste.
