Roasted tip of beef with veggies - 15 WW points per serving (including potatoes)

Recipe Ingredients for Roast Beef Tip with Veggies

3 lb beef, tip
4 potatoes
1 cup celery, chopped
1 cup carrots, chopped
1 cup onion, chopped
3 cloves garlic
2 tsp rosemary leaves
2 tsp olive oil
1/2 tsp salt
1/2 tsp pepper
2 tsp flour

Recipe Directions for Roast Beef Tip with Veggies

  1. Score roast slightly (1/4") for herbs to stick inside. Add garlic, salt, pepper and oil to a bown and rub over roast, getting it into the scored areas.

  2. Sear outside of roast on high heat in hot pan.

  3. Put celery, carrots, onion and garlic cloves onto bottom of roasting dish. Place roast on top. Put into the oven at 325 F.

  4. Potatoes - About an hour before the roast will be finished, put the peeled potatoes in salted water. Bring to boil, then simmer for 10 mins. Drain, then cut into pieces.

  5. Take roast out of pan, then add potatoes, coating in the juices from the bottom. Replace roast, arrange potatoes around it and put back in the oven for another 40 mins.

  6. Take out of oven and put the roast and potatoes aside. Let roast sit while making gravy.

  7. Gravy - To make gravy, pour remaining contents of the pan through a strainer back into a warm pot. Use a spoon to squeeze the veggies into the strainer to get the last of the juice. Add some water to the roasting pan and scrape off any sticky stuff from the bottom, adding it to the gravy pot. Heat over medium heat to simmer, adding a touch of flour at a time to thicken to desired consistency.

  8. Slice roast into pieces and put on serving dish with potatoes. Add some grave and/or put it at in a gravy boat.
