Yield 42 meatballs (2" diameter) Serving Size: 3 meatballs Simmer in your favorite low-fat tomato sauce, or make small 1/2" meatballs and simmer in homemade chicken soup, or use this turkey mixture to make stuffed peppers.

Recipe Ingredients for RJ's Turkey Meatballs

4 lbs. ground turkey
2 slices bread, reduced calorie
2 eggs
4 cloves garlic, chopped
1/4 cup fresh parsley, chopped
8 tbsp. cheese, pecorino romano, grated
1/2 tbsp. salt
1 tsp. ground pepper

Recipe Directions for RJ's Turkey Meatballs

  1. Soak the bread slices in water before adding to meat mixture. This will help distribute it through the meat.

  2. Mix all ingredients well.

  3. Form into 2" balls

  4. Bake in a 400 degree oven for 15-20 minutes until browned on top. (non-stick sheet pan, or cookie sheet lined with parchment or silpat).

  5. Add to your favorite spaghetti sauce and simmer for about 2 hours on low.
