Recipe Ingredients for Risotto stuffed zucchini and red pepper

1/8 cup lemon juice
1/8 cup orange juice
4 cups stock
1 teaspoon lemon zest
2 medium zucchini
2 red bell peppers
4 tablespoons Olive Oil
4 cloves garlic
1 medium onion
1 1/2 cups Arborio rice
1/2 cup dry white wine
1 cup grated cheese
2 tablespoons butter
1/2 cup breadcrumbs
1/2 cup parsley

Recipe Directions for Risotto stuffed zucchini and red pepper

  1. cut zucchin and peppers length wise and scoop out (add to risotto)

  2. make risotto with all ingredients except cheese and breadcrumbs

  3. stuff zucchini and red peppers w/ the rice

  4. top w/ breadcrumbs and cheese

  5. bake in 425 degree oven for 25 minutes
