Recipe Ingredients for Risotto with Saffron and Shrimp

3 1/2 cups low-sodium chicken broth
1 pinch saffron
1 teaspoon olive oil
1/2 cup finely chopped shallots
7 ounces arborio rice
8 fluid ounces white wine
16 shrimp
1 tablespoon grated Parmesan cheese
1 teaspoon grated Parmesan cheese
1 Freshly ground black pepper to taste
3 oz Fresh flat-leaf parsley

Recipe Directions for Risotto with Saffron and Shrimp

  1. In medium saucepan, bring broth to a boil. Reduce heat to low; let simmer until ready to use.

  2. In small bowl, combine 1/2 cup warm water and saffron; set aside.

  3. In separate medium nonstick saucepan, heat oil; add shallots. Cook over medium heat, stirring frequently, 1 minute.

  4. Add rice; stir to coat. Continuing to stir, cook

  5. 1 minute longer. Add wine and 1 cup of the simmering broth; cook, stirring frequently, until most of the liquid is absorbed.

  6. Stir reserved saffron liquid; add to rice mixture. Stir in 1/2 cup of the remaining simmering broth; cook, stirring frequently, until liquid is absorbed.

  7. Add all but 1/2 cup of the remaining broth, 1/2 cup at a time, stirring frequently after each addition until liquid has been absorbed. Add shrimp and remaining 1/2

  8. cup broth; cook, stirring frequently, 3 minutes, until shrimp turn pink and rice mixture is creamy.

  9. Remove saucepan from heat; stir in cheese and pepper.

  10. Serve garnished with
