Regular risotto- add other fun things like mushrooms or chicken to change it up

Recipe Ingredients for Risotto

1 cup arborio rice
1/2 cup diced yellow onion
2 tablespoons extra virgin olive oil
2 tablespoons butter
2 cups chicken broth
1 cup water
1 pinch basil
1 pinch salt

Recipe Directions for Risotto

  1. Melt the butter and oil in a pot over medium heat. Add in the onions and cook for a few minutes until they are slightly golden brown

  2. Add in the rice and cook for about a minute (until it becomes translucent)

  3. Add 1/2 cup of the broth and stir until the liquid is absorbed (may need to adjust the heat either up or down depending on how fast the rice absorbs the broth)

  4. Continue adding in small amounts of the broth and letting it absorb until all broth is incorporated, then do the same with the water (this should take around 20-30 minutes to complete-the rice should be tender)

  5. Add in salt and basil or any other spices you like to taste
