Recipe Ingredients for Risotto

1 1/2 cups arborio rice
3 cups low sodium chicken broth
1 clove garlic, minced
1 onion
1 red pepper
6 cups mushrooms, sliced
2 tbs butter

Recipe Directions for Risotto

Saute' onion, garlic, red pepper, mushrooms in butter. Stir in rice and add chicken broth 1/2 cup at a time until rice is tender.
