Creamy risotto that you can make at home, easily!

Recipe Ingredients for Risotto

1 cup Arborio rice
4 cups chicken broth
2 tablespoons Smart Balance Spread
1/2 cup parmesan cheese
4 green onions, chopped
3 tablespoons olive oil
6 mushrooms, sliced
1 Fresh ground pepper, to taste

Recipe Directions for Risotto

  1. Heat chicken broth in saucepan over medium heat to simmering, then cover and reduce heat to low.

  2. Place olive oil in large skillet and heat on medium. Add chopped green onion and rice and cook, stirring constantly, for 5 minutes, or until rice is golden brown.

  3. Slowly add one ladle (about 1/2 cup) of chicken broth to rice and onion mix, being careful not to make contact with the steam. Stir mixture constantly, allowing broth to absorb. Adding 1/2 cup of broth at a time, cook risotto for 20 minutes, or until rice is cooked through and mixture looks creamy.

  4. Before you add the last 1/2 cup of broth, stir in the mushrooms, 1 tbsp of the Smart Balance, and pepper. Allow mushrooms to cook through.

  5. Remove from heat, and add 1 more tbsp Smart Balance and parmesan cheese to the pan, stirring thoroughly.
