Red wine risotto with garlic and onion.

Recipe Ingredients for Risotto

3 tablespoons butter, unsalted
1 large onion, chopped
2 cloves garlic, minced
1 cup rice, arborio
1/2 cup red wine
4 cups chicken stock
1/2 cup parmesan cheese
1 cup peas, frozen

Recipe Directions for Risotto

  1. Melt butter in a large pan.

  2. Add chopped onion and saute until translucent.

  3. Add minced onion and saute until fragrant.

  4. Add rice and stir, coating with butter.

  5. Add red wine and simmer until reduced away.

  6. Add chicken stock, 1/2 cup at a time and reduce down, stirring frequently.

  7. After the last of the chicken stock has reduced down, add parmesan cheese and stir until melted.

  8. Fold in peas.

  9. Serve.
