add 1 lb brown rice to recipe

Recipe Ingredients for risotto

1 pint cherry tomatoes
1/4 cup extra virgin olive oil
1 tsp minced garlic
1 small onion, dices
2 cups diced zucchini
1/4 cup lemon juice
2 1/2 cup chicken broth
1 1/2 lb chicken breast

Recipe Directions for risotto

  1. toss tomatoes in 2 tsp olive oil and bake at 250 degrees for one hour

  2. heat 1 tsp oil in pan and cook half of the onion and garlic

  3. add zucchini and cook 5 minutes

  4. add lemon juice and salt and pepper to taste and blend all these ingredients until smooth in a blender to make a puree and set aside

  5. heat 1 tablespoon oil in medium pot and saute remaining onion, add rice and add broth one cup at a time until absorbed, stir continually for 20 minutes or until rice is done

  6. stir in zucchini puree and cooked, dice chicken

  7. top with tomatoes and parsley and salt and pepper to taste
