This is a mixture of Mediterranean and Nordic risotto. Alternative to a healthier diet.

Recipe Ingredients for Risotto with Mushrooms from Olga's Healthy Choice

1/2 cup risotto rice
1/2 cup barley
1/2 cup Buckwheat Groats
1 serving vegetable stock
200 g mushroom
200 g onion
1 tbsp olive oil
4 cup water
1 pinch salt
1 pinch chili pepper

Recipe Directions for Risotto with Mushrooms from Olga's Healthy Choice

  1. Soak and boil barley and buck wheat mixture in advance.

  2. In a pan, pure olive oil, add sliced onions. On medium heat oven roast onions for 5 to 7 minutes. Adds mushrooms. Roast them together for about 5 more minutes. Add risotto rice and a cup of water. Bring it to boil while stirring slowly. Then add another cup of water and continue to stir and cook. Add vegetable stock. (Or you can use home prepared vegetable stock which contain very less sodium.). Then add boiled barley-buckwheat mixture along with some more water. Stir and complete cooking. Remove from oven and let it rest for 10-15 minutes.

  3. It can be served with nice garden salad or cucumber cacik or a lovely creamy yogurt, if desired.
