A delicious risotto with leeks and mushrooms.

Recipe Ingredients for Risotto with leek and mushroom

1 cup Beef Stock
1 1tsp Olive Oil
1 1/2 cup Leeks, (Bulb And Lower Leaf-portion)
1 1/2 cup, pieces or slices Mushrooms
1 cup Arborio Rice
1 serving Dry White Cooking Wine
3 tbsp Parmesan, Grated Cheese
1/8 teaspoon pepper

Recipe Directions for Risotto with leek and mushroom

  1. Bring broth to a simmer in a medium saucepan. (Do not boil.) Keep warm over low heat.

  2. Heat oil in a large saucepan over medium heat. Add leeks and mushrooms; sauté 5 minutes or until leeks are soft.

  3. Add rice; cook 1 minute, stirring constantly. Stir in wine; cook 1 minute or until liquid is nearly absorbed, stirring constantly

  4. Add sage and warm broth, 1/2 cup at a time, stirring constantly until each portion of broth is absorbed (about 24 minutes total)

  5. Stir in cheese and pepper
