Recipe Ingredients for Risotto Con Due Formaggi

3 tbsp olive oil
1 cup onion, chopped
1 tbsp shallot, minced
1/2 cup red bell pepper, chopped
2 cups arborio rice
7 cups chicken stock
3 ounces gorgonzola cheese
3 ounces fontina cheese
1 tsp dried rosemary, crushed
1 tsp salt
1 tsp pepper
2 tbsp fresh parsley, chopped

Recipe Directions for Risotto Con Due Formaggi

  1. Heat the oil in a heavy saucepan or flameproof casserole. Add the onion, shallots and bell pepper and saute over low heat until soft, 5 minutes. Then add the rice and cook, stirring, another 3 minutes.

  2. Meanwhile, bring the stock to a boil in another saucepan. Reduce the heat and keep it at a simmer.

  3. Slowly add 1 cup of the hot stock to the rice, stirring constantly. Continue to stir, alloweing the rice to simmer. When the stock has been absorbed, add 1/2 cup and allow it to simmer, stirring well until it has been absorbed. Continue adding the stock 1/2 cup at a time, stirring constantly, until almost all the stock has been added.

  4. Add the cheeses, rosemary, salt, pepper and parsley. Stir and continue cooking until the rice is slightly creamy and just tender. Altogether the rice should cook for 25-30 minutes. Serve immediately.
