A variation of risotto alla sbiraglia, leaving out the peppers and adding tomatoes....

Recipe Ingredients for Risotto with chicken, mushrooms, and cherry tomatoes

2 cups fat-free chicken broth
2 cups fat-free beef stock
1 cup fresh mushrooms
1/2 pound boneless skinless chicken breast
3 tablespoon olive oil
3/4 cup diced onion
1 cup arborio rice
3/4 cup dry white wine
1/2 cup fresh parsley, minced
1/2 cup parmesan cheese, grated
1/2 cup cherry tomatoes, halved

Recipe Directions for Risotto with chicken, mushrooms, and cherry tomatoes

  1. Put stocks in small saucepan over low heat; keep at very low simmer

  2. Heat large, heavy-bottomed skillet over high heat. Add mushrooms and allow to cook with no fluids; they will squeak! Remove mushrooms and reserve.

  3. Flatten chicken breast to about 3/8 inch thickness. Raise heat under skillet to high, add oil, and brown both sides. Remove and reserve.

  4. Add onion to skillet and allow to soften, but not too much, deglazing pan with them. When enough, add rice; stir to coat with oil for several minutes. NOTE: it is essential to have arborio rice for this dish; long-grain rice will not work.

  5. With heat at high, add wine and continue to deglaze. When it has reduced to level of rice, begin to add stocks, about 3/4 cup at a time. Lower heat to produce a steady but slow simmer.

  6. Allow each addition to reduce to top of rice, stirring occasionally. Do not allow to get dryer than this.

  7. Chop chicken breast into bite-sized pieces in the meantime.

  8. After last stock addition, remove pan from heat. Add chicken with any juices that have accumulated, mushrooms, parmesan and parsley. Stir to combine.

  9. After mixture is well-combined, fold in tomatoes.

  10. Serve with freshly grated pepper and more parmesan and parsley, if desired.
