Recipe Ingredients for Risotto with Butternut Squash

1 pound butternut squash, peeled & cubed
5 cups chicken broth, low sodium
1 tsp olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 1/2 cups arborio rice
1/4 cup parmesan cheese, shredded
2 tbsp butter
1 salt
1 pepper

Recipe Directions for Risotto with Butternut Squash

  1. Preheat oven to 475.

  2. Toss cubed squash with olive oil. Roast on cookie sheet for 20-30 minutes.

  3. Bring broth to simmer in a saucepan.

  4. Melt butter over med-high heat in large skillet. Saute onion. Add garlic & saute till lightly browned. Stir in dry rice. Toss & stir to toast.

  5. Add 1 ladle full of hot broth to rice in skillet. Stir constantly until all the liquid is absorbed. Once that happens, add another ladle full of broth and repeat until the broth is all used and the risotto has become creamy.

  6. While the rice is still hot, mix in the parmesan cheese and the squash. Season to taste with salt & pepper.

  7. A nice addition would be some sauted baby bella mushrooms... YUM!
