Recipe Ingredients for Risotto w Butternut Squash

6 cups chicken broth
1 tbsp extra virgin olive oil
3 tbsp unsalted butter
1 medium onion
12 oz butternut squash
1/2 cup white wine
1 1/2 cups arborio rice
1/2 cup grated parmesan

Recipe Directions for Risotto w Butternut Squash

  1. warm stock

  2. Saute onion in oil & 2 T butter. Add sage; add squash.

  3. Add wine & 1 cup broth. cover and simmer over low heat 25 min until tender

  4. Add rice and toast for 1 min. Add stock in 1/2 cup amounts until completely absorbed, stirring constantly. about 25 min.

  5. Add 1 T butter & Parmesan off heat. Season to taste.
