Recipe Ingredients for Risotto with Asparagus

3 cups vegetable broth
2 tbsp. butter
1/3 cup finely minced onion
3 cups asparagus, cut into 1/2-inch lengths, leaving tips whole
2 cups arborio rice
1 cup dry white wine
1/2 cup freshly grated Parmesan
1 sprigs of fresh parsley

Recipe Directions for Risotto with Asparagus

  1. Bring broth to a low simmer. Keep warm over low heat.

  2. Melt 2 Tbs. butter or olive oil over medium heat in a large saucepan. Add onion and cook, stirring frequently, until onion begins to soften.

  3. Stir in asparagus and 1/4 cup of the warm broth. Cook over medium heat, stirring frequently, until asparagus us just tender when pierced with a fork (about 8 to 12 minutes).

  4. Add rice and saute, constantly, for about 1 to 2 minutes or until the nutty aroma of the rice is released.

  5. Add half the white wine and a splash more to the warm broth. Return rice to a simmer over medium heat. Stir slowly and nearly constantly, continuing to add broth as the liquid absorbs. You want to maintain a brothy suspension, like that of thick rice soup.

  6. Continue to stir, simmer, and add broth (or extra wine according to your taste) until rice is just tender to the bite - this will take more than 10 minutes. You may not use the entire measurement of the broth, or you may need more than is called for. As the risotto nears completion, taste to check the balance of broth and wine and adjust to your taste. When done, the risotto should have enough liquid to give it a moist, creamy-looking, softly pourable consistency. Don't cook so long that it becomes mushy.

  7. 7. Quickly stir in the Parmesan to finish, then immediately pour risotto into a shallow bowl or onto plates. Garnish with parsley and serve.
