Recipe Ingredients for Risotto with Asparagus and mushrooms

6 c fat-free chicken broth
1 lb. fresh asparagus, trimmed, cut into 3-inch pieces
1/4 cup olive oil
1 clove garlic, finely minced
1 cup chopped onion
1/2 lb. mushrooms, thinly sliced
2 cups Arborio rice
2 T finely chopped fresh flat-leaf parsley
2 T butter
1/2 c grated parmesan cheese

Recipe Directions for Risotto with Asparagus and mushrooms

  1. Place broth in a medium saucepan over medium heat; bring to a simmer. Add asparagus; simmer until asparagus is just tender. Remove asparagus and set aside.

  2. Heat 2 tablespoons oil in a large nonstick saute pan. Add garlic, onion, and mushrooms; saute until garlic is golden and mushrooms are just tender. Remove from heat; set aside.

  3. Heat remaining 2 T oil in a 6-quart stockpot. Add rice; saute over medium-low heat 3 to 4 minutes or until lightly toasted. Add hot broth to rice 1/2 cup at a time, stirring rice constantly until all of the broth is absorbed and the rice is creamy and soft.

  4. Add reserved asparagus, mushroom mixture, parsley, butter and cheese. Stir lightly; serve immediately.
