Tex Mex style meat loaf cooked in a crock pot.

Recipe Ingredients for Rio Grande Meat Loaf

15 ounces black beans
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/8 cup green chiles
1 teaspoon salt
2 teaspoons cumin
1 tablespoon chili powder
1/2 teaspoon pepper
1/4 cup oats
2 large egg whites
3 cloves garlic
2 pounds raw lean hamburger

Recipe Directions for Rio Grande Meat Loaf

  1. Prepare crock pot: make aluminum foil handles and place inside empty crock pot.

  2. Put everything in a big bowl and stir to combine.

  3. Pour into crock pot and smooth the top of the meat loaf.

  4. Cook on high for 2 to 3 hours until done.

  5. Lift out of crock pot using handles.

  6. Cool for 10 minutes before slicing.

  7. Serve with salsa if desired.
