Recipe Ingredients for Rigatoni Surprise

1 serving Sundried Tomato Pesto
1/8 box Rigatoni Dry
1/4 cup Tomato Sauce
1 cup slices Squash, Summer, All Varieties
1 cup, cubes Eggplant
1 1tsp Olive Oil

Recipe Directions for Rigatoni Surprise

  1. Put a pot of water to boil. Slice and quarter the eggplant and squash and place in a pan with some olive oil.

  2. Once the water is at a rolling boil, place the rigatoni in and cover for about 15 minutes. Let the vegetables cook on medium-high, stirring occasionally, for about 10 minutes or until partially browned.

  3. Pour in the tomato sauce and pesto, and heat, stirring occasionally. Drain the pasta and place back in the pot, or mix the vegetables in and serve.
