Recipe Ingredients for Rigatoni pasta

8 ounce rigatoni
8 ounce mozzarella, shredded
30 ounce Hunt's Diced Tomatoes with Basil, Garlic and Oregano
1 tablespoon tomato paste
5 cups spinach
4 cloves garlic
1/2 medium onion
1 large carrot, grated
1 tablespoon canola oil
8 ounce cottage cheese, low fat

Recipe Directions for Rigatoni pasta

  1. Cook rigatoni minus 2 minutes from al dente.

  2. Heat oil medium, saute onion until almost soft.

  3. Add garlic, cook until fragrant.

  4. Add tomato, paste, carrot, cook ~5 min.

  5. Add cottage cheese.

  6. Cover bottom of 9x13 pan w/ sauce.

  7. Cover with pasta. Cover with rest of sauce, then mozzarella.

  8. Bake 375 until bubbly. Broil until cheese slight brown.
