Recipe Ingredients for Rigatoni con Proscuitto, Pomodoro, Panna e Peperoncino

4 tbsp butter, unsalted
4 oz ham or proscuitto sliced
1/3 cup heavy cream
4 cups tomatoes, strained
1 Salt to taste
1 pinch dried red pepper flakes
1 lb pasta or ritatoni
1/2 cup parmigiano, grated

Recipe Directions for Rigatoni con Proscuitto, Pomodoro, Panna e Peperoncino

  1. Melt the butter in a large skillet over medium-high heat. When it begins to foam, add proscuitto and cook 30 to 40 seconds only. Add the tomatoes and cream, season with the salt and red pepper, and cook, uncovered, until the sauce has a medium-thick consistency, 7 to 8 minutes. Set aside.

  2. While the sauce is cooking, bring a large pot of water to a boil. Add 1 tbsp of salt and the rigatoni. Cook, uncovered, over high heat until the pasta is tender but still firm to the bite, al dente. Drain the pasta and add it to the sauce in the skillet. Mix it, over low heat, until the pasta is completely coated with the sauce. Serve at once, with a sprinkling of freshly grated parmigiano.
