Chicken, beetroot, salad leaves and oven roasted tomatoes

Recipe Ingredients for Rics Chicken & Beetroot Salad

25 g watercress, rocket and spinach leaves
100 g beetroot
1 tbsp olive oil
1 tsp cumin seed
100 g potatoes
150 g chicken
75 g tomatoes
1 tbsp balsamic vinegar
1 tsp honey

Recipe Directions for Rics Chicken & Beetroot Salad

  1. Use baby tomatoes, halved or quartered and roasted/dried in the oven to remove about half the moisture. (About 25mins at 180C)

  2. At the same time, put the chicken (Skinless) breast in some silver foil, add a dash of lemon juice and seal up. Cook at same time as the tomatoes for 25 mins at 180C.

  3. Boil and cube the potatoes.

  4. Chuck into a bowl and add the dressing.
