Ricotta Stuffed Zucchini Recipe

Great way of using up the abundance of zucchini in the summer! Works well as a main course or as an appetizer.

Recipe Ingredients for Ricotta Stuffed Zucchini

2 zucchinis, halved lengthwise
1/2 cup part-skim ricotta cheese
1/4 cup shredded part-skim mozzarella cheese
4 tbsp parmesan cheese, divided
1 tsp lemon juice
2 tsp dried basil
1 tbsp bread crumbs
1/2 cup chopped tomatoes

Recipe Directions for Ricotta Stuffed Zucchini

  1. Preheat oven to 450 degrees. Grease a baking sheet.

  2. Scoop out the seeds of each zucchini half with a spoon. Season hollowed-out halves with salt and pepper.

  3. Mix together the ricotta cheese, mozzarella cheese, 2 tbsp of parmesan, lemon juice, dried basil, salt and pepper. Divide cheese mixture between the four zucchini halves. Arrange stuffed zucchini on baking sheet. Add the diced tomatoes and sprinkle the bread crumbs evenly over the top of the zucchini. Add the remaining 2 tbsp of parmesan cheese, if desired.

  4. Bake in preheated over until zucchini is tender and filling is beginning to brown, 15-20 minutes.
