Recipe Ingredients for ricotta spinach pasta

12 oz whole wheat pasta
1 cup ricotta
1/3 cup water
1/3 cup mozarella
1 cup spinach
1/2 red onion
16 oz diced tomato
2 tblsp vinegar

Recipe Directions for ricotta spinach pasta

  1. cook pasta

  2. saute onions in a pan with oil

  3. add tomato and vinegar and simmer for at least 15 minutes

  4. mix ricotta with a little water and heat to make a creamier texture, and add to pasta with some garlic (optional) and tomato sauce

  5. top with spinach or mix in spinach and cheese
