Ricotta pie, a traditional Italian dessert, is light yet rich. This recipe is a great source of protein. You can use it as a breakfast, protein snack or dessert.

Recipe Ingredients for Ricotta Pie

3 cups part-skim ricotta cheese
3 large eggs
1 tsp. vanilla extract
1 tsp. nutmeg
1 tsp. cinnamon
2/3 cup Splenda
1 cup Fresh raspberries, strawberries, or blueberries (or all three!)

Recipe Directions for Ricotta Pie

  1. 1. Preheat oven to 300 degrees F. Spray a 9 inch pie pan with non-stick cooking spray.

  2. 2. In a large bowl, combine all ingredients and beat with an electric mixer, until well combined and smooth. (About 2 min.)

  3. 3. Pour into the prepared pie pan and bake at 300 degrees for 55-60 minutes. Pie will be brown around the edges and slightly jiggly in the middle. Cool 30 minutes, then refrigerate. Serve garnished with fresh fruit.
