Recipe Ingredients for Ricotta Pancakes or Waffles

1 cup original egg beaters
1 cup part skim ricotta cheese
1 cup low carb baking mix
1 tbsp baking powder
1/4 tsp salt
1/4 cup water

Recipe Directions for Ricotta Pancakes or Waffles

  1. Lightly oil a griddle or skillet and heat to medium. Because the baking mix contains soy flour, a lower heat is needed than for regular wheat flour.

  2. In a blender, combine Egg Beaters, Ricotta Cheese, and water on high speed until well blended. Turn mixture into a mixing bowl.

  3. Stir in the baking mix, baking powder, and salt. Beat well several strokes. Add more water if necessary to achieve a pancake or waffle batter consistency.

  4. Drop by 1/3-cup-fuls onto hot griddle, into 6-7" pancakes. Cook until tops begin to dry out, then flip and continue cooking until bottom is browned.

  5. OR, pour into greased and heated waffle iron and cook according to manufacturer's instructions.

  6. Make exactly 8 pancakes the same size to get the correct nutritional content. 2 pancakes = 1 serving.

  7. Net carbs for this recipe are 12 per serving.
