Healthy pancake recipe with added protein. I make with whole wheat pastry flour which has a softer texture like regular flour.

Recipe Ingredients for Ricotta pancakes

2 cups ricotta cheese
4 large eggs
1 cup lowfat buttermilk
1 tablespoon lemon juice
1 cup wheat flour
3 tablespoons sugar
1 teaspoon baking powder

Recipe Directions for Ricotta pancakes

  1. Separate the eggs.

  2. Beat egg whites until soft peaks form and set aside.

  3. Combine dry ingredients.

  4. Combine wet ingredients.

  5. Mix the dry into the wet.

  6. Softly fold in the whipped egg whites.

  7. Spray griddle with non-stick spray and cook.
